Red Limo Chimichuri

It’s fantastic on things like tri tip, shrimp, grilled chicken, roasted veggies. Or try it inside a Red Limo Sirloin Roulade.
Red Limo Chimichuri
1 3/4 cups Chopped Fresh Parsley
1/4 cup Chopped Fresh Cilantro
1/2 tsp Dried Oregano
1 Small Shallot (diced)
5 Garlic Cloves (finely diced)
3 TBS Red Wine Vinegar
2 TBS Lemon Juice
1/2 tsp Salt
1 tsp Red Limo Puree (or more to taste)
3/4 cup Olive Oil
Combine the ingredients and let sit a few minutes to allow the flavor to meld. It’s when eaten best same day but you can technically save it for 2-3 days before it gets weird.
