Mardi Gras Moon Pies
Here's a unique recipe for Mardi Gras Moon Pies with a spicy twist using our pepper puree:

For the Moon Pie Dough:

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup sugar
- 1/4 cup buttermilk
- 1/2 teaspoon baking soda
- 1/2 teaspoon Louisiana Pepper Exchange's pepper puree (adjust for desired spice level)
- 1/4 teaspoon salt

For the Filling:

- 1 cup marshmallow fluff or marshmallow creme
- 1/2 cup Louisiana Pepper Exchange's pepper puree (adjust for desired spice level)
- Purple, green, and yellow colored sugar for decoration (traditional Mardi Gras colors)

For the Moon Pie Dough:

1. Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour, sugar, baking soda, and salt.
- Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

2. Add Buttermilk and Pepper Puree:
- In a separate bowl, mix the buttermilk and Louisiana Pepper Exchange's pepper puree.
- Pour the buttermilk mixture into the dry ingredients and stir until the dough comes together. If needed, add a little more buttermilk to achieve the right consistency.

3. Chill the Dough:
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow it to firm up.

For Assembling the Mardi Gras Moon Pies:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Roll Out the Dough:
- On a floured surface, roll out the chilled dough to about 1/4 inch thickness.

3. Cut Out Rounds:
- Use a round cookie cutter or a glass to cut out rounds from the rolled dough. Aim for even numbers, as you'll sandwich the filling between them.

4. Bake:
- Place half of the dough rounds on the prepared baking sheet. Bake for 10-12 minutes or until they are lightly golden brown. Remove from the oven and let them cool completely.

5. Prepare the Filling:
- In a bowl, mix the marshmallow fluff or marshmallow creme with Louisiana Pepper Exchange's pepper puree. Adjust the spice level to your preference.

6. Assemble the Moon Pies:
- Spread a generous dollop of the spicy marshmallow mixture onto the cooled half of the baked dough rounds.
- Top each filled round with another round to create a sandwich.

7. Decorate:
- Roll the edges of the Moon Pies in colored sugar, using purple, green, and yellow for the traditional Mardi Gras colors.

8. Chill and Serve:
- Place the assembled Mardi Gras Moon Pies in the refrigerator for about 30 minutes to allow them to set.

9. Enjoy:
- Serve your homemade spicy Mardi Gras Moon Pies as a sweet and spicy treat for your Mardi Gras celebration. They offer a delightful fusion of flavors with a spicy kick from the pepper puree.
