Ghost Pepper Pineapple Margarita
For the Margarita:
2 oz Tequila (preferably silver)
1 oz Triple Sec
1 oz Fresh lime juice
1 oz Pineapple juice
1/2 oz Ghost pepper simple syrup (see below)
Ice cubes
Lime wedge, for garnish
Pineapple slice, for garnish
For the Ghost Pepper Simple Syrup:
1 cup Sugar
1 cup Water
1 Ghost pepper puree
Instructions:
For the Ghost Pepper Simple Syrup:
In a saucepan, combine sugar, water, and ghost pepper puree.
Bring to a simmer over medium heat, stirring until sugar is dissolved.
Simmer for 10 minutes to infuse the syrup with the pepper's heat.
Remove from heat and let it cool. Strain and store in an airtight container.
For the Margarita:
In a cocktail shaker, combine tequila, triple sec, lime juice, pineapple juice, and ghost pepper simple syrup.
Fill the shaker with ice and shake well until chilled.
Strain into a glass filled with ice.
Garnish with a lime wedge and a slice of pineapple.
