turkey meatloaf with spicy ketchup
Here’s a healthy twist on a classic dish from @spread.the.grub
This meatloaf makes a great dinner option or even a meal prep option for weekday lunches!
Ingredients:
1 large chopped onion
4 garlic cloves minced
1 Tbsp finely chopped rosemary
1 Tsp finely chopped thyme leaves
2 lbs ground Turkey
3/4 cup breadcrumbs (or pork rind crumbs for a low carb option)
1/2 cup milk
2 Tbsp Worcestershire sauce
1 large egg
1/3 cup sugar free ketchup
2 Tsp Louisiana Pepper Exchange jalapeño puree
Salt & Pepper to taste
Preheat oven to 325° & spray a baking dish with cooking spray. Sauté onions on medium heat for 5 minutes then season with salt & pepper & add in the garlic and herbs. Cook for 1 minute then remove from heat.
In a large bowl combine the turkey, Worchester sauce, eggs, milk, cooked veggies, breadcrumbs, salt & pepper. Mix until well combined.
Form loaf of meat with hands on the baking dish then coat with the spicy ketchup. To make the spicy ketchup combine 1 cup of @primalkitchenfoods & 2 tsp of Louisiana Pepper Exchange jalapeño purée & mix. Bake for 1 hour 20 minutes or until the internal temperature reaches 160°.
Serve with fresh rosemary on a serving dish & enjoy!
