Ingredients:

For the Queso Sauce:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 2 cups shredded cheddar cheese
- 2 teaspoons Red Habanero Puree
- Salt and pepper to taste

For the Nachos:
- 1 bag of tortilla chips
- 1 cup cooked and seasoned ground beef or shredded chicken (optional)
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapenos (optional)
- 1/4 cup sliced black olives (optional)
- 1/4 cup diced red onions (optional)
- Sour cream, guacamole, and salsa for serving

Instructions:

1. To make the Queso Sauce, melt the butter in a saucepan over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes until the roux is lightly golden.

2. Gradually pour in the milk while whisking constantly to prevent lumps from forming. Cook until the mixture thickens, about 3-4 minutes.

3. Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth.

7. If using, distribute the cooked and seasoned ground beef or shredded chicken over the tortilla chips.

8. Sprinkle diced tomatoes, sliced jalapenos, sliced black olives, and diced red onions over the nachos.

9. Drizzle the warm Red Habanero Queso Sauce generously over the loaded nachos.

10. Serve immediately with sour cream, guacamole, and salsa on the side.
