Fresh Chipotle Salsa
Ingredients:

- 1 pound fresh tomatillos, husks removed and washed
- 4 teaspoons Louisiana Pepper Exchange Chipotle Pepper Puree (adjust to taste)
- 2 cloves garlic, peeled
- 1/2 small onion, chopped
- 1/4 cup fresh cilantro leaves
- 1 tablespoon lime juice
- Salt to taste

Instructions:

1. Preheat your broiler on high. Place the tomatillos on a baking sheet lined with aluminum foil.

2. Broil the tomatillos for about 5-7 minutes, turning them halfway through, until they are charred and softened. Remove from the oven and let them cool slightly.

3. In a blender or food processor, combine the broiled tomatillos, Chipotle Puree, garlic, onion, cilantro, and lime juice.

4. Blend until the salsa reaches your desired consistency. If you prefer a chunkier salsa, pulse the ingredients a few times. For a smoother salsa, blend until completely smooth.

5. Taste the salsa and season with salt as needed. Adjust the amount of chipotle peppers based on your preferred level of spiciness.

6. Transfer the chipotle salsa to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

7. Serve the chipotle salsa with tortilla chips, tacos, quesadillas, or any of your favorite Mexican dishes.
