Mouth-watering, Peruvian-style roasted chicken – guaranteed to be a crowd pleaser at any dinner party.


6 to 8 Chicken thighs
1 Jar Aji Amarillo Pepper Puree
2 Garlic cloves pressed
1 TBSP Olive oil
1 TBSP Paprika
1 TBSP Cumin
1 TBSP Oregano
2 TBSP Honey
Juice from 1 lime
1/3 Cup water


Mix the ingredients then pour into a baggie with the chicken. Let marinate for an hour to overnight. Place chicken skin side down in an air fryer at 375° and cook for 40 minutes flipping the chicken over half way through. (chicken should cook to minimum 165° internal temp. Cooking times may vary)

While the chicken is cooking blend 1 cup plain Greek yogurt with cilantro, 1 to 2 cloves of garlic, juice from 1 lime, salt & pepper to taste.
