Strawberry Chipotle BBQ Nachos

Ingredients

Tortilla chips (enough to cover a sheet pan)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

Pre-cooked asada, shredded pork, beef, or chicken

1 small red onion, thinly sliced

1/2 cup corn (fresh, frozen, or canned)

6 cherry tomatoes, halved or quartered

Pickled jalapeños (optional)

Cooking oil as needed

Louisiana Pepper Exchange Strawberry Chipotle BBQ Sauce (to taste)
Instructions

Preheat oven to 400°F.

In a pan over medium heat, reheat the cooked meat. Add Strawberry Chipotle BBQ Sauce to taste and simmer until the sauce caramelizes onto the meat, creating a sticky, flavorful coating. Add a splash of oil if needed.

On a cookie sheet, lay out a generous layer of tortilla chips.

Sprinkle with shredded cheese, then layer on the BBQ meat, corn, sliced red onion, and pickled jalapeños (if using).

Bake in the oven for 6–8 minutes, or until cheese is fully melted.
